This morning I received an email from Foursquare (a location-based social network where you can “check in” at different locations) indicating that I have been ousted as the “mayor” at one of my favourite champagne bars in London, Searcys. I have only been away traveling for six days and apparently there is a new mayor in town. I will reclaim my mayorship but in the mean time, I thought I would share about a classic champagne cocktail that Searcys Champagne Bar does very well – The Classic!
The Classic Champagne Cocktail is perfect to add a little extra to your celebration. The Classic recipe is simple:
- 1 sugar cube (I prefer brown sugar)
- 2 dashes bitters
- 20ml/3/4fl oz Cognac
- Champagne (I personally like the Besserat de Bellefon Grande Tradition NV that Searcys uses)
Tip: Soak the sugar cube in bitters & garnish with a lemon twist.
